I’m one of those people who don’t enjoy cooking and I really want to get in and out of kitchen as quickly as possible. I also want the kids growing up eating a variety of meals and loving “mum’s cooking” but as it stands now they don’t really like it much. They’ll reluctantly (after a lot of protesting and bribing from my part) eat rice and curry made by me but if Naanie’s made it then they’ll happily eat it (or at least Miss A does).
Part of the reason why it’s hard is that I’m not prepared. So, to change that, I’ll be trying to make weekly meal plans. My main focus now are lunch and dinner recipes.
Monday – An easy meal using the Old El Paso Fajitas kit. This can also be made to be veggie friendly, using mushrooms, mixed frozen vegetables/stir fry vegetables, peppers and parsnips (or any mix that you’d like).
Tuesday- Easy Salmon and Potato foil packets. The recipe calls for using salmon but I’ll use chicken breast instead as I’ve not got any salmon in at the moment.
Wednesday- Rice with Spinach and potatoes (in coconut milk) curry. This is a traditional Tanzanian recipe. Sorry, I can’t add the recipe now as need to confirm the exact method and ingredients amounts.
Thursday- This Minestrone Soup with rice or bread on the side.
Friday- Shepherd’s Pie. I’ll be adding some peas as well.
Saturday- Spicy Spaghetti with garlic mushrooms.
Sunday- Rest day, will probably order a takeaway or have homemade pizza.
I love the BBC Goodfood website as it’s got so many easy to make meals recipes and you can search by ingredients too.
